Ingredients

  • 1.5 lbs (700g) lamb leg or shoulder, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade: In a bowl, combine olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
  2. Marinate lamb: Add lamb cubes and toss well to coat. Cover and refrigerate for 2–4 hours (overnight for best flavor).
  3. Skewer the meat: Thread marinated lamb cubes onto skewers.
  4. Grill: Preheat grill or grill pan over medium-high heat. Cook skewers for 10–12 minutes, turning occasionally, until lamb is charred outside and tender inside.
  5. Serve: Enjoy with warm pita bread, Tzatziki sauce, fresh tomatoes, cucumber, and onions.

Tips & Variations

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • For smoky flavor, grill over charcoal instead of a pan.
  • Add bell peppers and onions to the skewers for a colorful variation.
  • Pair with Classic Greek Salad for a complete meal.
