Ingredients

  • 3 medium ripe tomatoes, cut into wedges
  • 1 large cucumber, sliced into half-moons
  • 1 green bell pepper, sliced into rings

  • 1/2 cup Kalamata olives
  • 200g (7 oz) block of feta cheese
  • 1/4 cup extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prep vegetables: Cut tomatoes, cucumber, bell pepper, and red onion, then place in a large salad bowl.
  2. Add olives: Toss in the Kalamata olives.
  3. Top with feta: Place the block of feta cheese on top of the salad (traditional style).
  4. Dress the salad: Drizzle with olive oil and red wine vinegar. Sprinkle with oregano, salt, and black pepper.
  5. Serve: Toss gently just before serving or enjoy as is for a traditional presentation.
