Ingredients

  • 2 cups Greek yogurt (full-fat, plain)
  • 1 large cucumber, grated
  • 2–3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tbsp fresh dill (chopped, or 1 tsp dried dill)
  • 1 tbsp fresh mint (optional, finely chopped)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare cucumber: Grate the cucumber, then squeeze out excess water using a cheesecloth or paper towels.
  2. Mix base: In a bowl, combine Greek yogurt, garlic, olive oil, lemon juice, dill, and mint (if using).
  3. Add cucumber: Stir the grated cucumber into the yogurt mixture until well combined.
  4. Season: Add salt and black pepper to taste.
  5. Rest: Cover and refrigerate for at least 30 minutes before serving to allow flavors to blend.
  6. Serve: Enjoy with pita bread, fresh veggies, grilled chicken souvlaki, or gyros.

Tips & Variations

  • Use full-fat Greek yogurt for the creamiest texture.
  • If garlic flavor is too strong, roast it before adding for a milder taste.
