Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter

  • 16 oz cream cheese (softened)
  • 1/2 cup sugar
  • 2 large eggs

  • 1/2 cup sour cream
  • 1 tbsp cocoa powder
  • 1 tbsp red food coloring
  • 1/2 tsp vinegar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the pan to form crust.
  3. In a bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla, sour cream, cocoa powder, red food coloring, and vinegar. Mix until combined.
  4. Pour cheesecake mixture over crust and smooth top with a spatula.
  5. Bake for 50 minutes or until center is set. Let cool, then refrigerate at least 4 hours.
