Ingredients

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 3/4 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, eggs, melted butter, vanilla extract, and lemon zest.
  4. Combine wet and dry ingredients until just mixed. Fold in blueberries gently.
  5. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  6. Bake for 10–12 minutes, or until golden and springy to the touch.
  7. Let cool for 5 minutes before removing from the pan.
  8. Whisk together powdered sugar and lemon juice to make the glaze. Dip cooled donuts into the glaze, then let set before serving.
