Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- Zest of 1 lemon
- 1 cup powdered sugar (for glaze)
- 2 tbsp fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, eggs, melted butter, vanilla extract, and lemon zest.
- Combine wet and dry ingredients until just mixed. Fold in blueberries gently.
- Spoon the batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 10–12 minutes, or until golden and springy to the touch.
- Let cool for 5 minutes before removing from the pan.
- Whisk together powdered sugar and lemon juice to make the glaze. Dip cooled donuts into the glaze, then let set before serving.
