Ingredients

  • 12-16 large white or cremini mushrooms, stems removed
  • 1/2 cup pizza sauce or marinara
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 50g mini pepperoni slices or diced regular pepperoni
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt & pepper to taste
  • Optional garnish: fresh parsley or basil

Instructions

  1. Preheat oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Prepare mushrooms: Clean mushrooms and remove stems. Place caps on the baking sheet, cavity side up.
  3. Make filling: In a small bowl, mix pizza sauce, mozzarella, Parmesan, pepperoni, oregano, basil, salt, and pepper.
  4. Stuff mushrooms: Spoon the pizza mixture into each mushroom cap generously.
  5. Bake: Bake for 18-20 minutes until mushrooms are tender and cheese is melted and golden.
  6. Serve: Garnish with fresh parsley or basil and serve warm as an appetizer or snack.
