- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme or rosemary
- Salt and black pepper to taste
- 2 tbsp honey or maple syrup (optional glaze)
Instructions

- Season pork: Rub pork tenderloin with olive oil, garlic, paprika, thyme, salt, and pepper.
- Wrap with bacon: Lay bacon strips slightly overlapping on a board. Place pork on top and roll tightly to wrap completely.
- Roast: Place wrapped pork on rack. Roast for 25-30 minutes, or until internal temperature reaches 63°C (145°F). For extra crispiness, broil 2-3 minutes.
- Optional glaze: Brush honey or maple syrup over bacon during the last 5 minutes of baking for a sweet finish.
- Rest & slice: Let pork rest for 5 minutes before slicing. Serve warm with sides of your choice.
Tips & Variations
- Add a layer of Dijon mustard or garlic butter under the bacon for extra flavor.
- Stuff pork with spinach, cheese, or mushrooms before wrapping.
- Pair with roasted potatoes, grilled vegetables, or a fresh salad.
- For a smoky twist, cook on the grill instead of oven-roasting.
