Jelly Slice Recipe

The Jelly Slice is a classic no-bake dessert with three irresistible layers: a crunchy biscuit base, a creamy condensed milk filling, and a bright, wobbly jelly topping. Ingredients

For the Biscuit Base:

  • 250 g (9 oz) plain biscuits (such as Digestives or Graham crackers)
  • 125 g (1/2 cup) unsalted butter, melted

For the Creamy Filling:

  • 395 g (1 can) sweetened condensed milk
  • 2 tsp powdered gelatine
  • 1/4 cup boiling water
  • 1/4 cup fresh lemon juice

For the Jelly Layer:

  • 85 g (1 packet) flavored jelly crystals (strawberry or raspberry works best)
  • 1 cup boiling water
  • 1 cup cold water

Instructions

  1. Line a rectangular slice pan (approx. 20 x 30 cm / 8 x 12 in) with baking paper, leaving an overhang for easy removal.
  2. Crush the biscuits into fine crumbs using a food processor. Mix with melted butter until combined. Press firmly into the base of the prepared pan. Refrigerate for 30 minutes.
  3. Dissolve gelatine in boiling water, stirring until completely clear. Add lemon juice and condensed milk, mix until smooth. Pour over the chilled biscuit base and refrigerate for 1 hour until set.
  4. Prepare the jelly topping: dissolve jelly crystals in boiling water, then stir in cold water. Allow to cool to room temperature (important: do not pour hot jelly on the filling).
  5. Carefully pour the cooled jelly mixture over the creamy layer. Refrigerate for 3 hours or until the jelly is firm.
  6. Once set, slice into squares or rectangles using a hot knife (wipe between cuts for neat edges).

  • Add desiccated coconut to the biscuit base for extra flavor.
