Ingredients
For the Biscuit Base:
- 250 g (9 oz) plain biscuits (such as Digestives or Graham crackers)
- 125 g (1/2 cup) unsalted butter, melted
For the Creamy Filling:
- 395 g (1 can) sweetened condensed milk
- 2 tsp powdered gelatine
- 1/4 cup boiling water
- 1/4 cup fresh lemon juice
For the Jelly Layer:
- 85 g (1 packet) flavored jelly crystals (strawberry or raspberry works best)
- 1 cup boiling water
- 1 cup cold water
Instructions
- Line a rectangular slice pan (approx. 20 x 30 cm / 8 x 12 in) with baking paper, leaving an overhang for easy removal.
- Crush the biscuits into fine crumbs using a food processor. Mix with melted butter until combined. Press firmly into the base of the prepared pan. Refrigerate for 30 minutes.
- Dissolve gelatine in boiling water, stirring until completely clear. Add lemon juice and condensed milk, mix until smooth. Pour over the chilled biscuit base and refrigerate for 1 hour until set.
- Prepare the jelly topping: dissolve jelly crystals in boiling water, then stir in cold water. Allow to cool to room temperature (important: do not pour hot jelly on the filling).
- Carefully pour the cooled jelly mixture over the creamy layer. Refrigerate for 3 hours or until the jelly is firm.
- Once set, slice into squares or rectangles using a hot knife (wipe between cuts for neat edges).
