Ingredients

  • 1 kg (2 lbs) potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1/2 cup chicken or vegetable broth
  • Optional garnish: fresh parsley

Instructions

  1. Preheat oven: Preheat oven to 200°C (400°F).
  2. Prepare potatoes: Place potato wedges in a large roasting pan.
  3. Make lemon mixture: In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  4. Toss potatoes: Pour the lemon mixture over the potatoes and toss to coat evenly. Pour broth over the potatoes.
  5. Roast: Roast for 40-45 minutes, turning once halfway through, until golden brown and crispy on the edges.
  6. Serve: Remove from oven, garnish with fresh parsley, and serve hot as a side dish.
