Ingredients

  • 200g cooked chicken breast, shredded
  • 1 bag (about 200g) tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 small red onion, finely chopped
  • 1 jalapeño, sliced (optional)
  • 2 tbsp sour cream or Greek yogurt
  • 2 tbsp salsa or pico de gallo
  • Fresh cilantro for garnish
  • Salt & pepper to taste

Instructions

  1. Preheat oven: Preheat oven to 200°C (400°F).
  2. Arrange chips: Spread tortilla chips evenly on a large baking sheet.
  3. Add toppings: Evenly distribute shredded chicken, black beans, corn, red onion, and jalapeño slices over the chips.
  4. Add cheese: Sprinkle cheddar and mozzarella evenly on top.
  5. Bake: Bake for 10-15 minutes until cheese is melted and bubbly.
  6. Serve: Remove from oven, top with sour cream, salsa, and fresh cilantro. Serve immediately while hot.
