Ingredients
- 500g ground beef
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt & pepper to taste
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar or Monterey Jack cheese
- 4 large flour tortillas
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Cook beef: Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic. Add ground beef and cook until browned. Drain excess fat.
- Season: Stir in chili powder, cumin, paprika, salt, and pepper. Cook for another 2 minutes.
- Add beans and rice: Mix in cooked rice and black beans until evenly combined. Remove from heat.
- Assemble burritos: Lay out tortillas and evenly divide the beef mixture among them. Sprinkle cheese on top and add optional toppings if desired.
- Fold & serve: Fold the sides over, then roll up tightly. Serve warm, optionally with salsa, guacamole, or sour cream.
