  • 1 tbsp lemon juice
  • 1 tbsp unsalted butter, cut into small pieces

Instructions

  1. Prepare the crust: In a large bowl, whisk flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water until dough holds together. Divide into two disks, wrap, and chill for at least 1 hour.
  2. Prepare the filling: Toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit 10 minutes to release juices.
  3. Roll out the dough: Roll one disk into a circle and fit into a 9-inch pie pan. Trim edges, leaving slight overhang.
  4. Assemble the pie: Add apple filling, dot with butter, and cover with second rolled-out crust. Seal edges and cut small slits for steam vents. Optionally, create a lattice design.
  5. Bake: Preheat oven to 400°F (200°C). Bake for 20 minutes, then reduce temperature to 350°F (175°C) and bake 40 more minutes until crust is golden and filling is bubbling.
  6. Cool & Serve: Let pie cool at least 2 hours before slicing. Serve with vanilla ice cream or whipped cream.
