Ingredients

  • 4 cups green cabbage, finely shredded
  • 2 cups purple cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 small red onion, thinly sliced (optional)
  • 1 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tbsp sugar (or honey)
  • 1/2 tsp celery seed (optional)
  • Salt & black pepper to taste

Instructions

  1. Prepare vegetables: In a large bowl, combine shredded green cabbage, purple cabbage, carrots, and onion.
  2. Make dressing: In a separate bowl, whisk together mayonnaise, vinegar, mustard, sugar, celery seed, salt, and pepper until smooth.
  3. Combine: Pour the dressing over the vegetables and toss well to coat.
  4. Chill & Serve: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
