Ingredients
- 1 1/2 cups orzo pasta
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions
- Cook orzo: Bring a pot of salted water to a boil. Cook orzo according to package directions until al dente. Drain and rinse under cold water to cool.
- Prepare vegetables: Chop cucumber, onion, olives, and herbs. Halve cherry tomatoes.
- Make dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Combine: In a large bowl, mix orzo, vegetables, feta, and herbs. Pour dressing over and toss until well coated.
- Chill & Serve: Refrigerate for 30 minutes before serving for best flavor. Garnish with extra feta and herbs if desired.
