Orzo Salad Recipe

This refreshing Orzo Salad is a light and flavorful Mediterranean-inspired dish made with tender orzo pasta, fresh vegetables, herbs, and a zesty lemon dressing. Perfect as a side dish or a light main for summer meals, BBQs, or picnics!

Ingredients

  • 1 1/2 cups orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. Cook orzo: Bring a pot of salted water to a boil. Cook orzo according to package directions until al dente. Drain and rinse under cold water to cool.
  2. Prepare vegetables: Chop cucumber, onion, olives, and herbs. Halve cherry tomatoes.
  3. Make dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Combine: In a large bowl, mix orzo, vegetables, feta, and herbs. Pour dressing over and toss until well coated.
  5. Chill & Serve: Refrigerate for 30 minutes before serving for best flavor. Garnish with extra feta and herbs if desired.
