Ingredients
- 500g boneless, skinless chicken breasts, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 4 large flour tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro
Instructions
- Marinate chicken: In a bowl, toss chicken with chili powder, paprika, cumin, garlic powder, salt, pepper, and 1 tbsp olive oil. Let sit for 10 minutes.
- Cook chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
- Sauté vegetables: In the same skillet, cook sliced bell peppers and onions for 5-6 minutes until tender-crisp.
- Combine: Return chicken to the skillet and toss with vegetables for 1-2 minutes.
- Serve: Warm tortillas and fill with chicken and vegetables. Add optional toppings as desired and serve immediately.
