Ingredients
- 1 kg (2 lbs) potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- 4 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- 1 tsp dried oregano
- Salt & pepper to taste
- 1/2 cup chicken or vegetable broth
- Optional garnish: fresh parsley
Instructions
- Preheat oven: Preheat oven to 200°C (400°F).
- Prepare potatoes: Place potato wedges in a large roasting pan.
