Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup raspberry puree (fresh or frozen, thawed)
  • Optional: fresh raspberries for garnish

Instructions

  1. Preheat oven to 175°C (350°F) and line an 8×8 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press firmly into the bottom of the pan to create the crust.
  3. Beat cream cheese and 1/2 cup sugar in a large bowl until smooth. Add eggs one at a time, then mix in vanilla extract.
  4. Pour cheesecake mixture over crust. Spoon raspberry puree in dollops and use a toothpick or skewer to swirl it through the cheesecake for a marbled effect.
