For the Whipped Cream:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the strawberries: Toss sliced strawberries with sugar and lemon juice. Let them macerate for at least 15 minutes until juicy.
  2. Make the shortcakes: Preheat oven to 425°F (220°C). In a bowl, mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Stir in milk and vanilla just until dough comes together.
  3. Turn dough onto a floured surface, gently pat to 1-inch thickness, and cut into rounds. Place on a baking sheet lined with parchment and bake 12–15 minutes until golden.
  4. Whip the cream: Beat heavy cream with powdered sugar and vanilla until soft peaks form.
  5. Assemble: Split warm shortcakes in half. Layer with strawberries and whipped cream, then top with the remaining biscuit half. Add extra cream and strawberries on top for a beautiful finish.
