Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts (cut into chunks)
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Fresh parsley, for garnish
  • Wooden or metal skewers

Instructions

  1. Prep skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Make marinade: In a bowl, whisk together olive oil, soy sauce, brown sugar, Worcestershire sauce, apple cider vinegar, garlic, paprika, cayenne, salt, and pepper.
  3. Marinate chicken: Add chicken chunks to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
  4. Assemble skewers: Thread marinated chicken, bell peppers, and onion alternately onto skewers.
  5. Grill: Preheat grill to medium-high heat. Cook skewers 12–15 minutes, turning occasionally, until chicken is fully cooked (165°F / 74°C inside).
  6. Serve: Garnish with fresh parsley and serve hot with dipping sauces or over rice.
