Ingredients

  • 8 oz (225 g) bittersweet chocolate, chopped
  • 1/2 cup (115 g) unsalted butter
  • 3/4 cup (150 g) granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup (60 g) unsweetened cocoa powder
  • Optional: powdered sugar or cocoa powder for dusting

Instructions

  1. Preheat oven: Heat oven to 350°F (175°C). Grease an 8-inch (20 cm) round cake pan and line the bottom with parchment paper.
  2. Melt chocolate & butter: In a heatproof bowl over simmering water (or in the microwave), melt chocolate and butter together until smooth.
  3. Mix in sugar & eggs: Stir in sugar, salt, and vanilla. Add eggs one at a time, whisking well after each.
  4. Add cocoa: Sift cocoa powder over the mixture and stir until fully incorporated.
  5. Bake: Pour batter into prepared pan. Bake 25–30 minutes, until the cake has a thin crust and the center is set.
  6. Cool & serve: Let cake cool in the pan for 10 minutes, then invert onto a plate. Dust with powdered sugar or cocoa before serving.
