Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 tsp red pepper flakes (or more to taste)
  • 1 1/2 lbs (700 g) carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • Salt & black pepper, to taste
  • Juice of 1/2 lemon
  • Fresh cilantro or parsley, for garnish
  • Optional: 1/2 cup coconut milk for creaminess

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook for 3–4 minutes until fragrant.
  2. Add spices & carrots: Stir in red pepper flakes, cumin, turmeric, and carrots. Cook for another 2 minutes.
  3. Simmer: Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until carrots are tender.
  4. Blend: Use an immersion blender (or transfer to a blender) to puree until smooth. Stir in lemon juice and coconut milk (if using).
  5. Adjust & serve: Season with salt and pepper to taste. Garnish with fresh herbs and serve warm.
