Ingredients
- 2 cups Greek yogurt (full-fat, plain)
- 1 large cucumber, grated
- 2–3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice (freshly squeezed)
- 1 tbsp fresh dill (chopped, or 1 tsp dried dill)
- 1 tbsp fresh mint (optional, finely chopped)
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare cucumber: Grate the cucumber, then squeeze out excess water using a cheesecloth or paper towels.
- Mix base: In a bowl, combine Greek yogurt, garlic, olive oil, lemon juice, dill, and mint (if using).
- Add cucumber: Stir the grated cucumber into the yogurt mixture until well combined.
- Season: Add salt and black pepper to taste.
- Rest: Cover and refrigerate for at least 30 minutes before serving to allow flavors to blend.
