Ingredients

  • 1 can (400g) black beans, drained and rinsed
  • 1 small carrot, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 egg (or flax egg for vegan)
  • 2 tbsp olive oil
  • 4 burger buns
  • Optional toppings: lettuce, tomato, avocado, cheese, ketchup, mustard

Instructions

  1. Prepare patties: In a bowl, mash black beans with a fork until mostly smooth. Add grated carrot, onion, breadcrumbs, garlic powder, smoked paprika, black pepper, and egg. Mix until combined.
  2. Form patties: Shape mixture into 4 equal-sized patties.
  3. Cook burgers: Heat olive oil in a skillet over medium heat. Cook patties 4-5 minutes per side until golden and heated through.
  4. Assemble: Toast burger buns if desired. Place patties on buns and add optional toppings.
  5. Serve: Serve immediately with your favorite sides like sweet potato fries or salad.
