Ingredients
- 2 tbsp olive oil or butter
- 500 g chicken breast or thighs, cut into strips
- 1 onion, finely chopped
- 250 g mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp Dijon mustard
- 1 tsp paprika
- 200 ml sour cream or crème fraîche
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
- Pasta, rice, or mashed potatoes (to serve)
Instructions
- Sear chicken: Heat oil in a large skillet over medium-high heat. Cook chicken strips until golden brown. Remove and set aside.
- Cook vegetables: In the same skillet, sauté onion and mushrooms until softened. Add garlic and cook for 1 more minute.
- Make the sauce: Stir in chicken broth, mustard, and paprika. Simmer for 5 minutes.
- Add sour cream: Lower heat, stir in sour cream, and return chicken to the pan. Cook gently for 3–4 minutes until heated through. Do not boil.
- Serve: Garnish with parsley and serve hot over pasta, rice, or mashed potatoes.
