Chicken Stroganoff Recipe

Ingredients

  • 2 tbsp olive oil or butter
  • 500 g chicken breast or thighs, cut into strips
  • 1 onion, finely chopped
  • 250 g mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 200 ml sour cream or crème fraîche
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Pasta, rice, or mashed potatoes (to serve)

Instructions

  1. Sear chicken: Heat oil in a large skillet over medium-high heat. Cook chicken strips until golden brown. Remove and set aside.
  2. Cook vegetables: In the same skillet, sauté onion and mushrooms until softened. Add garlic and cook for 1 more minute.
  3. Make the sauce: Stir in chicken broth, mustard, and paprika. Simmer for 5 minutes.
  4. Add sour cream: Lower heat, stir in sour cream, and return chicken to the pan. Cook gently for 3–4 minutes until heated through. Do not boil.
  5. Serve: Garnish with parsley and serve hot over pasta, rice, or mashed potatoes.
