Ingredients
- 200g Chinese egg noodles or rice noodles
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1-inch piece of ginger, sliced thinly
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 150g cooked chicken, thinly sliced (or tofu for vegetarian)
- 1 cup bok choy or napa cabbage, chopped
- 1 medium carrot, julienned
- 2 green onions, sliced
- Salt & pepper to taste
- Optional garnish: cilantro, chili flakes, sesame seeds
Instructions
- Cook noodles: Prepare noodles according to package instructions, drain, and set aside.
- Prepare broth: In a large pot, heat sesame oil over medium heat. Sauté garlic and ginger for 1-2 minutes until fragrant.
- Add broth & seasoning: Pour in chicken or vegetable broth, soy sauce, and bring to a gentle simmer.
