- 2 cups macaroni pasta (uncooked)
- 1 can (400 g) diced tomatoes
- 1 can (400 g) kidney beans, drained
- 2 cups beef broth (or chicken broth)
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper
- 2 cups shredded cheddar cheese
- Fresh parsley or green onions for garnish
Instructions
- Cook Meat: In a large pot, brown the ground beef with onion, garlic, and bell pepper until cooked through. Drain excess fat.
- Add Flavor: Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1–2 minutes to release flavors.
- Build Sauce: Add diced tomatoes, tomato paste, beans, and broth. Stir well.
- Cook Pasta: Add macaroni pasta directly into the pot. Cover and cook on medium heat for 10–12 minutes, stirring occasionally, until pasta is tender.
