Ingredients

  • 450 g ground beef (or ground turkey)

  • 2 cups macaroni pasta (uncooked)
  • 1 can (400 g) diced tomatoes
  • 1 can (400 g) kidney beans, drained
  • 2 cups beef broth (or chicken broth)
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese
  • Fresh parsley or green onions for garnish

Instructions

  1. Cook Meat: In a large pot, brown the ground beef with onion, garlic, and bell pepper until cooked through. Drain excess fat.
  2. Add Flavor: Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1–2 minutes to release flavors.
  3. Build Sauce: Add diced tomatoes, tomato paste, beans, and broth. Stir well.
  4. Cook Pasta: Add macaroni pasta directly into the pot. Cover and cook on medium heat for 10–12 minutes, stirring occasionally, until pasta is tender.
  5. Add Cheese: Stir in 1 1/2 cups shredded cheddar until melted and creamy.
  6. Serve: Top with the remaining cheese, let it melt, and garnish with parsley or green onions.
