Cake:

- 1 cup coconut milk
- 1 cup shredded coconut (sweetened or unsweetened)
Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup coconut milk
- 1 tsp vanilla extract
- ½ cup shredded coconut, for topping
Instructions
- Preheat: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar: In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Combine: Alternately add dry ingredients and coconut milk to the butter mixture, beginning and ending with dry ingredients. Fold in shredded coconut.
- Bake: Divide batter evenly between prepared pans. Bake 30–35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then remove from pans to wire racks.
- Make frosting: Beat butter until creamy. Gradually add powdered sugar, coconut milk, and vanilla extract until smooth and fluffy.
- Assemble cake: Place one cake layer on a serving plate. Spread frosting on top, then place the second layer. Frost the top and sides of the cake. Sprinkle shredded coconut over the frosting.
