  • 9–12 lasagna noodles (cooked or no-boil)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese

  • 1 zucchini, thinly sliced
  • 1 red bell pepper, chopped
  • 1 cup spinach leaves
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions to Make Easy Veggie Lasagna

  1. Preheat the oven: Preheat to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the vegetables: Heat olive oil in a skillet over medium heat. Sauté garlic, zucchini, bell peppers, and spinach until slightly tender. Season with basil, oregano, salt, and pepper.
  3. Assemble the lasagna: Spread 1/2 cup marinara sauce on the bottom of the dish. Layer noodles, half the ricotta, half the sautéed veggies, 1/2 cup mozzarella, and more sauce. Repeat layers and top with remaining mozzarella and Parmesan.
